A One Stop Shop Ratatouille
Below is a quick-and-easy one-pot Ratatouille recipe that can be made with the products from the Punto Simply Market in Prati, Rome.
Ratatouille
A jar of tomato sauce
2 eggplants
2 large tomatoes
2 zucchinis
1 clove of garlic
1 yellow onions
2 tablespoon of oil
1 teaspoon of pepper
1 teaspoon of salt
Optional: half a teaspoon of red pepper flakes
Directions:
1. Heat up oil in a medium sized pot and once heated add one diced onion and garlic to the pot. Cover the pot with lid until the onion and garlic are browned
2. Cut eggplants into ½-inch cubes, tomatoes in 1 inch cubes, and zucchini in small circles and add them to the pot
3. Let the vegetables stew, cooking on low heat and covered for 30 minutes
4. Add tomato sauce, salt and pepper and cover for 15 minutes and stir occasionally
5. Plate the dish, add red pepper flakes if desired
